September has made its presence known. The autumn weather is rolling in and bringing all that is damp, grey and foggy with it. But fear not, because when it comes to fending off end-of-summer fatigue Union of Genius has your best interests at heart.
Today we’re giving away samples of Lovepurecakes’ new gluten free seaweed breadcrumbs with our popular soup, Celtic Kelpie (chicken, dulse and almond). It’s part of Scottish Food Fortnight and a collaborative celebration to mark the change of season.
Lovepurecakes’ specialises in gluten free products and founder Lorna Pellet is no stranger to seaweed. You should try her lemon and seaweed cookie dough. Like Union, Lovepurecakes also values local, seasonal, Scottish ingredients – and the breadcrumbs certainly tick all those boxes. To obtain the seaweed for them Lorna travelled to Kerrera, an island off the coast of Oban, with seaweed harvester Rory McPhee. Rory works with artisan seaweed producer Mara and showed Lorna how to sustainably collect the seaweed she would need.
Back on shore, the seaweed and breadcrumbs are blitzed into a delicious mix with lentils and white pepper. They’re rich in protein, full of fibre and contain lots of vitamins and minerals from the seaweed.
We think the resulting seacrumbs are the perfect partner for our Celtic Kelpie. It’s a gentle broth packed with Scots potato, leek and kale. Chunks of chicken provide a meaty backdrop and to finish we stir through crunchy almond slivers for texture and Mara’s smoky dulse seaweed for aromatics. Like most of our soups, it’s gluten free too.
For today only, all sit-in and takeaway portions of Celtic Kelpie will come with a sachet of seacrumbs and a recipe card (while stocks last).
